Wasabi-Beer Braised Brisket

A bold twist on classic comfort food, this slow-braised brisket combines beer, chili sauce, onions, garlic, and a hint of wasabi for rich, savory flavor that’s perfect for sandwiches.
The Essentials:
- 1 Best Beef Brisket Point (about 4–4½ pounds)
- 2 cloves garlic, minced
- 1 tablespoon peanut or vegetable oil
- 1 teaspoon salt
- ½ teaspoon pepper
- 2 medium onions, cut into wedges
- 1 bottle (12 ounces) beer
- 1 bottle (12 ounces) chili sauce
- 2 teaspoons wasabi paste
- Coleslaw (recipe follows)
- 3 whole wheat baguettes or sandwich rolls
Pan to Plate:
- Preheat oven to 325°F.
- Press minced garlic evenly over the brisket.
- Heat oil in a large skillet over medium heat and brown the brisket on all sides. Season with salt and pepper.
- Place onions in a large baking dish or stockpot and set the brisket on top.
- Pour in the beer and chili sauce. Bring to a boil, cover tightly, and bake for 3½–4 hours, or until fork tender.
- Remove the brisket and keep warm. Skim excess fat from the cooking liquid, bring it to a simmer, and stir in the wasabi paste.
- Slice the brisket against the grain and return it to the sauce.
- Serve on sandwich rolls with onions, extra sauce, and fresh coleslaw.
