The Essentials:

  • 1 Best Beef Blade Chuck Roast (2–2½ pounds)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can (14–15 oz) reduced sodium beef broth
  • 1 cup Burgundy or dry red wine
  • 2 tablespoons minced garlic
  • 3 cups frozen vegetable blend
  • 1 tablespoon fresh thyme

Pan to Plate:

  1. Heat a lightly greased stockpot over medium heat. Add the roast and sear on all sides until browned. Season with salt and pepper.
