The Essentials:
- 1 Best Beef Brisket Flat (2½–3½ pounds)
- 1 tablespoon vegetable oil
- ½ teaspoon salt
- ½ teaspoon pepper
- 1 large onion, coarsely chopped, divided
- 1 teaspoon minced garlic
- 1 cup apple cider
- 2 tablespoons butter
- 5 cups sliced unpeeled apples
- 1 cup fresh or frozen cranberries
- 2 tablespoons brown sugar
- ⅓ cup toasted walnuts, chopped
Pan to Plate:
- Heat oil in a stockpot over medium heat. Brown brisket evenly; remove and season with salt and pepper.
- Add onion and garlic; cook 4–5 minutes until tender. Return brisket (fat-side up) with cider. Bring to a boil, reduce heat, cover, and simmer 2¾–3¼ hours until fork-tender.
- In a skillet, melt butter. Cook apples and reserved onion 5–7 minutes. Add cranberries and brown sugar; cook until thickened. Stir in walnuts and keep warm.
- Remove brisket and keep warm. Reduce cooking liquid by boiling 10–12 minutes.
- Slice brisket thin against the grain. Serve with sauce and apple mixture.
