The Essentials:

  • 1 Best Beef Brisket Flat (2½–3½ pounds)
  • 1 tablespoon vegetable oil
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 large onion, coarsely chopped, divided
  • 1 teaspoon minced garlic
  • 1 cup apple cider
  • 2 tablespoons butter
  • 5 cups sliced unpeeled apples
  • 1 cup fresh or frozen cranberries
  • 2 tablespoons brown sugar
  • ⅓ cup toasted walnuts, chopped

Pan to Plate:

  1. Heat oil in a stockpot over medium heat. Brown brisket evenly; remove and season with salt and pepper.
  2. Add onion and garlic; cook 4–5 minutes until tender. Return brisket (fat-side up) with cider. Bring to a boil, reduce heat, cover, and simmer 2¾–3¼ hours until fork-tender.
  3. In a skillet, melt butter. Cook apples and reserved onion 5–7 minutes. Add cranberries and brown sugar; cook until thickened. Stir in walnuts and keep warm.
  4. Remove brisket and keep warm. Reduce cooking liquid by boiling 10–12 minutes.
